Deanston 1997 Palo Cortado Finish Highland Single Malt Scotch Whisky (70cl / 51.8%)

Our latest flash of inspiration resulted in our oldest Palo Cortado finish to date. After spending more then 18 years maturing gracefully in former bourbon casks, this golden dram was finished over 2 long years in Palo Cortado sherry hogsheads, pairing the sweetness of bourbon and the elegant full-bodied character of the sherry proved to be a masterstroke, creating a rich and honeyed single malt bursting with toffee apples and sweet fruit, with a rewarding tang of gingerbread.

 

Tasting Notes

Aroma: Honey, dried fruit, toffee, citrus, floral notes, with a deep underlying sweet maltiness and rich oak.

Taste: Smooth rich oak, honey, sweet dried fruit. Toffee with a hint of gentle spice.

Finish: Long, lingering, fruity sweet with hints of honey, sweet oak, and dried fruit.
